Chia Seed Breakfast Pudding

Ingredients

  • 5 tbsp chia seeds
  • 300ml coconut milk
  • 2 tsp tahini
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  •  a few toasted pumpkin seeds
  • a handful of fresh blueberries and a few frozen raspberries

Directions

  1. Combine chia seeds, coconut milk, tahini, cinnamon and vanilla
  2. Place in the fridge for 20-30  minutes or leave overnight
  3. Serve with berries and pumpkin seeds
