Soup of the Day – Broccoli, Courgette and Lemon

I am a big soup fan, at any time of year. I make a big batch of this one so that I can eat some and freeze some. If you are busy like me, all you will need to do is defrost and reheat it for lunch or supper.

I like to add some extra protein on the side for satiety, maintaining blood sugar balance and supporting muscle mass. You could add left over roast chicken, fish, a couple of eggs anyway, a cup of chickpeas or lentils to make the meal extra nourishing and nutritious.

Broccoli, courgette and lemon soup


  • 1 tbsp olive oil
  • 1 small onion chopped
  • 1 garlic clove minced
  • 1 small head of broccoli chopped (about 150g)
  • 1 medium courgette chopped
  • Juice and zest of 1/2 a lemon
  • 600ml of homemade or shop bought vegetable stock (or use bone broth)
  • Salt and black pepper seasoning


  1. Heat olive oil in a medium saucepan
  2. Sauté onion for 3-4 mins add garlic and sauté for an extra minute
  3. Add the broccoli and courgette and stir
  4. Add the stock and cook for around 20 mins
  5. Put soup in a blender and process until smooth
  6. Add required seasoning and serve
