Banana Bread Recipe
This home-made Banana bread is a great way of using up those over-ripe bananas. It is gluten free, dairy free and refined sugar free
Ingredients
- 3 x small- medium ripe bananas
- 1/2 cup of gluten free oats
- 2 eggs, lightly beaten
- 1 tsp vanilla extract/powder
- 1/4 cup of xylitol
- 1/2 cup of coconut oil, softened
- 1/4 cup non-dairy milk, I use coconut or almond milk
- 1 cup gluten free flour
- 1/4 cup ground almonds
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 1/4 tsp sea salt
- 1/2 cup of raisins/other dried fruit
Directions
- Bake the bananas in their skins for 20 minutes in a pre-heated oven at 180 degrees celsius
- Add the oats, xylitol, vanilla, eggs, coconut oil and milk to a large bowl, combine and leave to soak for about 10 minutes
- Allow bananas to cool slightly, remove skins and mash in a large bowl
- Add the bananas, including any liquid, to the oat mixture
- Add the remaining ingredients (flour, baking powder, bicarb of soda, salt, almond flour, raisins) and combine with the banana and oat mixture
- Bake in a greased loaf tin for 45 minutes or until a knife inserted into the banana bread comes out clean
