Almond and Parsley Pesto








  • 50g Almonds
  • Large handful of fresh parsley leaves
  • Large handful of fresh basil leaves
  • Juice and zest of 1 medium lemon
  • 1 garlic clove minced
  • 5 tbsp extra virgin olive oil
  • salt and pepper to season


  1. Place the almonds in a food processor and pulse until broken into small pieces
  2. Add all the remaining ingredients, except salt and pepper, and blend to desired consistency
  3. Season with salt and pepper
