Not really a recipe, just a great combination of flavours that work so well together. This is one of my favourite all-time breakfasts but one that you may like to save for the weekend when you have a bit more time to savour and enjoy.
Smoked Fish, Poached Egg and Avocado
Ingredients
- 1 egg
- a small portion of smoked fish, I like wild salmon but you could use mackerel, trout or sardines
- 1/2 a ripe avocado
- Juice of half a small lime
- chilli flakes (optional) and seasoning
- A slice of your favourite bread. I prefer gluten free
Directions
- Poach the egg in boiling water with a dash of vinegar for 3-5 minutes depending on desired consistency
- Mash the avocado with the lime juice and add chilli flakes and seasoning
- Toast the bread, if using
- Place the mashed avocado on the toasted bread (or plate), add your choice of fish and top with the poached egg
